One of the most useful instruments I ever worked with was a chromatography system from a company called Isco (now Teledyne Isco). They used to make a simpler version of their current systems that consisted of a retro mechanical strip-chart recorder, a fraction collector, and pump/control capable of doing gradients. It used disposable silica cartridges, so there was never any column packing. It eliminated the need to be present while doing routine purifications (flash chromatograph), a big productivity boost.

What made this instrument great was its low cost and simplicity. But it was on the bulky side and still cost too much for the average employee to buy on their own. I often wished the manufacturer would offer a smaller, cheaper version, but instead they decided to go the other way (this may have changed, I'm not sure).

If you could convince an instrument maker to create one product to make your life in the lab easier, what would it be?

I have a good deal of experience with the Biotage Horizon systems, which I found to be not very robust in terms of the pumps, but good enough. The newest ISCO/Biotage systems have gotten more complicated, in terms of instrumentation (UV spectra) and the user interface. At the same time, they're pretty simple to operate, gradient capable and they are an incredible productivity multiplier.

When a chemist is playing human fraction collector, that chemist's hands are essentially incapable of doing anything else.

I suppose that the most useful instrument to synthetic organic chemists (outside of the NMR) is the LC/MS. Unfortunately, they're just so darn expensive (w/r/t initial costs and maintenance) that they're all but inaccessible for most synthetic labs.

My missing instrument isn't exactly used as an instrument, but a sufficient electronic notebook is certainly missing from my equipment. The need of making something that is easily searchable, something that can have backups and has a method where information is entered as easily as on paper is nowhere to be found.

A tablet PC could do the job in combination with software like Evernote, but im finding it difficult to find something that fits my needs, wich is different from every person...
